GASTRODIET2023 is the third of a series of international conferences addressing diet and its association with gastrointestinal health. Over the last 6 years (when the last GASTRODIET conference was held), there have been considerable developments in the area of diet, diet therapies and nutrition. It was easy, therefore, to entitle the meeting, 'Evolution and Revolution'.

It has been a pleasure to observe the evolution of diet in gastroenterology from largely personal interest in what was on the menu for lunch to now broad interest from all health professionals in the power of diet in disease pathogenesis and therapy, mental health and patient-self-empowerment. The revolution in the concepts of what makes diet healthy, in how we can assess what diets are doing in our physiology, and in novel diet therapy for a range of chronic gastrointestinal conditions made constructing the program challenging, as there is too much to talk about!

Nevertheless, the program addresses a range of aspects that hopefully will inform and foster further work and collaborations. We hope that you enjoy this 'virtual' version of GASTRODIET2023.
