⅔ cup GoodMix Blend 11, soaked in ⅓ water overnight |
¼ cup rolled oats |
2 2½ Tbsp coconut oil, melted |
4 plain sweet biscuits |
1 cup macadamia nuts, soaked in boiling water |
Low FODMAP berries (e.g. strawberries/blueberries/raspberries) |
Coconut yoghurt |
2 2½ Tbsp corn flour |
1 tsp vanilla essence |
¼ cup maple syrup |
Prepare GoodMix Blend 11 by adding
⅓ cup water to ⅔ cup raw mix. Stir and refrigerate overnight.
Prepare macadamia nuts by soaking in boiling water for at least 1 hour to soften. Drain before use.
In a food processor, add prepared GoodMix Blend 11, rolled oats, coconut oil and plain sweet biscuits. Process until mixture is resembles sticky breadcrumbs. Spread mixture into a lined 20x30cm slice tray then set aside in fridge.
Add all remaining ingredients to a food processor. Process until mixture is smooth and creamy.
Pour mixed berry filling over chilled slice base. Freeze for at least 2 hours before serving.
This slice makes a delicious vegan, dairy-free dessert alternative - remove from freezer for 10 minutes before serving to allow the slice to soften slightly.
