Choc, Chia and Rice Puff Slice

RICE PUFF SLICE

A quick, tasty treat for the kids lunch box!

Makes 14 pieces

Ingredients

  • 2 cups Monash FODMAP Certified Freedom Foods Rice Puffs
  • 1/2 cup desiccated coconut
  • 1/2 cup rolled oats
  • 1/4 cup chia seeds
  • 1 Tbsp. cocoa powder
  • Dash vanilla essence
  • 1/4 cup coconut oil, melted
  • 1/2 cup rice malt syrup 
Method

  1. Spray a 20x30cm slice tray with oil and line with baking paper, set aside
  2. Mix all dry ingredients together in a large bowl
  3. Pour in all the wet ingredients and mix well
  4. Pour into the prepared tray and press firmly with a spatula
  5. Place in the fridge for 2 hours or until set, cut and enjoy!

*Wrap in baking paper and then glad wrap and freeze for lunch boxes
